Homemade Coconut Milk Coco Bread
120 mins prepServes 8
This recipe is for homemade coconut milk coco bread, a soft and slightly sweet bread perfect for serving with savory dishes like jerk chicken salad or enjoying with sweet plantains.
Mix the bread flour, yeast, brown sugar, and salt together in a large bowl. Gradually add the warm coconut milk and 1/4 cup melted butter, mixing until a dough forms. Knead the dough until it is smooth and elastic. Place the dough in a lightly greased bowl, cover it, and let it rise in a warm place until doubled in size. Once risen, gently punch down the dough and divide it into 8 equal portions. Roll each portion into a circle. Brush one side of each circle with extra melted butter, then fold the circle in half. Place the folded breads on a baking sheet, cover lightly, and proof for 30 minutes. Preheat your oven to 350°F (175°C). Bake the coco bread for 15–18 minutes, or until golden brown.
